Chef Elle Green's Summer Drink Recipes | WREG.com ? Memphis ...

School?s out and learning is the last thing on a student?s mind. That?s probably not the case with parents though. They?re checking with area learning centers and tutors about a refresher course.They?re just hoping to give their child that edge.

At the request of Live At 9 viewers, even Chef Elle is offering a couple of Refreshers?only this course is strictly for adults. And with the temperatures reaching record numbers, the timing couldn?t be more perfect.

It may be best to leave the crime and fire fighting to the experts, but give these cocktails a try. As always, Chef Elle has kept it fresh and easy.

Blue Crush and Extinguish as prepared by Chef Elle

Ingredients

Blue Crush

2 jiggers (3 oz.) Tequila
1 oz. blueberry liqueur
1 1/2 oz. fresh blueberry juice
1/2 oz. sweet sour
crushed iced
fresh mint sprigs

Extinguish

4 oz. fresh watermelon juice
Moscato
1/2 T heavy cream (optional)
fresh mint sprigs

Tools

sharp knife, cocktail shaker, cocktail glasses, measuring cups

Old School Translations

T = tablespoon; t = teaspoon; c = cup

Procedure

Blue Crush

Place crushed ice in a well chilled glass. To the shaker, add crushed ice, tequila, blueberry liqueur, blueberry juice and sweet sour. Secure lide; shake well and pour in glass.

Extinguish

In a well chilled glass, add watermelon juice and heavy cream. Finish with Moscato. Garnish with mint sprig and watermelon piece.

Both recipes yield one serving. To accommodate a larger crowd, simply double or triple the ingredients.

Easy Solutions: To make simple syrup, add equal parts water and sugar. Cook over low heat until sugar has completely dissolved. To make sweet sour, combine equal parts simple syrup and citrus juice.
